Pastina: The Coziest Bowl of Comfort

There are cozy meals, and then there is pastina. It is a teeny tiny pasta that, when boiled and mixed with just a few simple ingredients, transforms into one of life's greatest pleasures.

Pastina is the ultimate bowl of belly-warming goodness—the kind of meal that soothes aching bones when we’re sick and instantly elevates those hygge vibes. The best part? It takes less than ten minutes to make.

A quick, simple, and extra cozy delight.

Aside from the pastina itself (which you can find at Mariano’s or any Italian grocer), you likely already have everything you need on hand. When my kids were little, I made a more brothy version—the tiny noodles floated around in warm chicken stock, and a heaping spoonful of Parmesan made it all the more satisfying.

Then, one day at my sister Nicole’s house, I watched her whip up her version—thicker, cheesier, and more like a creamy, eggy porridge. One bite, and I never looked back.

That’s the recipe I’m sharing with you today.

Pastina

Tiny pasta cooked in broth, egg, and Parmesan cheese for the ultimate bowl of comfort.

Ingredients

  • 2 cups chicken stock
  • ½ cup pastina (I prefer Barilla)
  • 2 eggs, lightly beaten
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt & pepper, to taste

Instructions

  1. Boil the broth. Pour the chicken stock into a small soup pot and bring to a boil.

  2. Cook the pastina. Add the pastina and cook according to the package instructions (mine took about 6 minutes).

  3. Prepare the eggs. While the pastina is cooking, lightly beat the eggs in a small bowl.

  4. Combine. Once the pastina is done, turn off the heat and slowly stir in the eggs, mixing continuously. The eggs will cook as you stir, creating a silky, creamy texture.

  5. Finish & serve. Stir in the Parmesan, butter, salt, and pepper. Serve warm and enjoy!
